Smoked Salmon & Peach Caprese Salad

We’ve been blessed with a scorcher of a summer this year and I think we’ve learnt that when it comes to our dinner, we want quick, as little work top heat as possible but still a deliciously fresh and satisfying meal. Enter this twist on the classic using our gorgeous in season peaches and smoked salmon! 


  • 150g good quality and sustainably sourced smoked salmon, roughly torn 
  • 1 peach, finely sliced 
  • 1 buffalo mozerella, roughly torn 
  • a small bunch of basil 
  • 1tsp capers 
  • 1-2tbsp very special olive oil 
  • bread for mopping 


  • Evenly spread the salmon and peach slices around the plate, and then spot the mozzarella pieces on top 
  • Using only the basil leaves, tuck the larger ones underneath some of the pieces on the plate, leaving the small leaves to garnish randomly on the top 
  • Sprinkle the capers around the dish and then give a good drizzle of olive oil all over
