Homemade Granola
Quite possibly the easiest thing to ever make, and despite making it on repeat I’m somehow still not bored of this breakfast. It stores for ages, it’s changeable and feels a little naughty for the morning even though it’s got all the fat, fibre and flavour you need. I couldn't ever justify buying pre-made granola now.
Ingredients
- 3tbsp coconut oil (when solid)
- 270g runny honey
- 300g rolled oats
- 5tbsp flax seed
- 5tbsp chia seeds
- 2 handfuls whole almonds, roughly chopped
- 1tsp fine sea salt
Method
- Preheat oven to 200C
- Gently melt oil and honey together in a small pan
- In a large bowl, mix together all other ingredients
- Mix the honey and oil into the dry ingredients and thoroughly coat so all is covered. The mix should look fairly wet but not sodden
- Line a large baking tray with parchment paper, and spread out the oat mix into a single layer
- Bake for 20mins and take out of the oven, leaving to cool. The mix will be a bit soft, feeling like flapjack but it hardens as it cools
- When its cool, break it up into pieces and mix with ingredients of your choice
- Store all together in an airtight container where it’ll keep for a few weeks
Suggestions for granola mix
- Coconut: flakes, desiccated
- Dried fruits: figs, sultanas, apricots, cranberries, goji
- Seeds: pumpkin, sunflower
- Chocolate: cacao nibs, roughly chopped dark chocolate
